Hot Cross Bun originates from St Albans, in England, where Brother Thomas Rodcliffe, a 14th-century monk at St Albans Abbey, developed a similar recipe called an 'Alban Bun' and distributed the bun to the local poor on Good Friday, starting in 1361.

Ingredients

2 hrs approx
as required
  • For yeast activation
  • 1/2 cup warm milk
  • 1 tspactive dry yeast
  • 2 tspsugar
  • For making dough
  • 1 cupflour
  • 2 tspsugar
  • 2 tbspwarm milk
  • 2 tspbutter
  • 1/4 tsp salt
  • 1 dropblue food colour
  • 1 tbspchopped black raisins
  • 1 tbspchopped dried blue berries
  • as neededOil for brushing
  • For making cross
  • 1 tbspflour
  • 1 tbspwater
  • As requiredBlue food colour

Steps

  1. 1

    For yeast activation, take half cup of warm milk, in it add 2 tsp sugar and 1 tsp yeast. Mix it rigorously then cover it and rest it in a warm place for 10 mins. After 10 mins, you will notice that the yeast has doubled up in size and the mixture would turn frothy, as shown in the image below.

    Now in a large bowl add maida, salt. Mix it then add the yeast mixture into it. Now mix it well and add warm milk and butter little by little and Knead a soft dough. Now add a drop of blue colour to it, then again Knead the dough by folding and stretching method as shown in the image below.

    Now add some black raisins and chopped dried blue berries to it. Knead the dough along with them. Make a smooth dough. Brush some oil over the dough. Now cover the dough and rest it for at least 1 and half hours in a warm place. I have kept it inside the oven.

    After 1 and half hours, you will notice that the dough has doubled up in size. Pinch it and release all the air from it and Knead the dough once again for about a minute or two. Now divide the dough into 4 parts. Make 4 smooth ballsout of it.

    Now grease the bowls with some oil and place the balls inside each of the greased bowls, as shown in the image. Now cover the bowls and keep them in a warm place for 15 mins.

    Now for making cross sign over it, take a small bowl, add a tbsp of maida/flour to it and a tbsp of water. Mix it well to form a smooth paste. Add a drop of blue food colour and mix it well. Now pour this mixture into a piping bag. Now keep this aside.

    Now after 15 mins, you will notice that the balls/buns has double-up the size, refer image 1 below. Now apply some milk over the buns. Make cross over it using the piping bag.

    Now for pre-heating, take a kadai with it's base covered with salt and a stand over it. I have placed another net over it because I'm making the buns in katoris. If you are using a cake tin then simply use the base stand and then after pre-heating, place the cake tin over the base stand. It would do. Cover it and pre-heat the kadai for 5 mins on high flame and then 3 mins. on medium flame.

    Place the bun bowls over it, as shown in the image below. Cover the kadai and bake it on a low flame for about 15 mins. Then remove the bowls & quickly apply some butter over it and cover the bowls with a damp cloth as shown in the image below. Rest it for about 15 mins more & then demould them.
