Traditional dish on Easter Sunday. This time cooked in an instapot.
Cooking Instructions

Take the ham hock and cut it so it will be easier for the flavors to mingle. Add the ham hock to the instapot. Heat the chicken broth in a pot.

Dice the onion add to the instant pot. In the pot with the broth wilt the collard greens. I did this in batches. Add the collard greens, garlic, half the salt, and sugar. Pressure cook on high for 1 hour. Taste and add salt if needed. Keep warm till ready to serve. I hope you enjoy!!!

When I had a garden, I would grow these and can them. This would eliminate the first step and make them a quick and easy side dish. This recipe is for fresh greens. The flavor is a little richer when preparing this way. I use bacon ends and pieces for this recipe. It gives a nice chunk of smoked pork. If not available, normal bacon will work just fine. Just give yourself plenty of time to prepare this. wingmaster835
