Steps

In a bowl, add maida and salt. Mix it then add ghee and mix it well. Now add water, little by little and make a smooth and tight dough. Now cover the dough and rest it for about 30 mins.

Now let's make sugar syrup. In a large bowl, add sugar and water, let it come to boil then add a tsp of lime juice. Mix it well then add elaichi powder and few kesar strands. Mix everything well and cook the syrup until it becomes nearly one string consistency. Now cover it and keep this syrup aside.

Now let's come to the dough. Now divide the dough into 5 equal parts and roll 5 thin chapatis out of it as shown in the image below.

Now take a chapati and brush some oil/ghee over it and sprinkle some cornflour over it. Spread it evenly. Now place the second chapati over it. Repeat the same process with the rest of the chapatis, placing one above the other.

Now roll them tightly, holding from one side, sealing the edges by brushing with some water. Cut from both the sides, as shown in the image below. Now cut them into 10 to 11 pieces as shown.

Now press each one of them gently from the middle as shown below.

Now with the help of rolling pin, roll each one of them gently, slightly. Repeat the same with the rest. Cover them and keep it aside.

Now for frying, heat some oil in a pan for deep-frying. When the oil gets medium hot, drop down the khajas one by one. Fry them on a low flame first and then on a medium flame until it gets golden and crisp from within... fry the other khajas too in the same process. Keep them aside.

Let the khajas cool down a bit. Now drop down the khajas one by one into the sugar syrup. Let it soak for about a min or two. Then remove them and enjoy....
