In a blender jar add mint leaves coriander leaves, ginger garlic green chillies and 2 tbsp water and blend it to smooth paste.

Heat a pot with ghee add cashew nuts and saute till they turn golden and keep it aside

Now in a same pot add whole spices saute them on medium flame till they turn aromatic

Add chopped onion and saute. Now add veggies and cooked for 3-4 minutes. Now add prepared masala paste and cook it.

Add chopped tomatoes and saute till they turn mushy

Add garam masala powder and salt and mix well and then add basmati rice and cashew nuts. Mix it gently without breaking the grains.

Then add 2 cups of warm water (rice water ratio always 1:2) mix well and cover it and cook it for 5-15 minutes on low-medium flame.

Finally serve it with raita.
