Bittergourd has many health benefits. The most important is it helps to control blood sugar level. That bitterness of karela is best for our health.

Children remain in a denial mode when see karela dish. We can add lemon juice and sugar or dry mango powder while cooking karela dish. This reduce the bitterness to a great extent.

Here, in this recipe I have fried small karela chunks with boiled potatoes and lots of onion. Onion in increasing quantity reduce the bitterness also.

Ingredients

  1. 250 gramchopped Karela/ bittergourd
  2. 100 gramchopped boiled Potatoes
  3. 1large onion sliced
  4. 1green chili diced
  5. 1 tspgrated ginger
  6. 1/2 tspponch phutan
  7. to tasteSalt
  8. 1/4 tspred chilli powder
  9. 2 tspmustard oil

    Heat oil in a kadhai. Add ponch phutan and allow them to splutter. Mix chopped onion and chili. Sauté for 2 minutes only on medium flame. This way onion will give sweetness to the recipe.

    Add chopped karela, salt, turmeric and red chili powder. Mix well.

    When karela is almost fried, add chopped boiled potatoes and grated ginger. Sauté for further two minutes and karela fry is ready to serve as a side dist with steamed rice.
