Omelette Célestine

This is a recipe which was invented by Auguste Escoffier, more than a hundred years ago. All the same, I think it fits the description of a 'keto' dessert, if the jam one uses is sugar free (St Dalfour brand is very good) and the icing sugar is kept to a minimum, only a very light dusting. One can also make the apple purée oneself, in order to cut the sugar, by using a sweet apple like a Pippin (use 2-3 apples), cooked gently in butter, with a thinly pared piece of lemon rind and some cinnamon. To make my omelette, I simply used some homemade apple sauce made with Bramley's, lemon juice and sugar which I had in my freezer from the last roast pork we had. It was utterly delicious.

Break two eggs into one bowl, and three into another

Heat up a grill to high.

With a fork, gently beat all the eggs until there is no evident yolk, but not too excessively.

Heat a nonstick frying pan and add a tablespoon of unsalted butter until it begins to brown.

Pour in the two eggs mixture and using a wooden spoon or a fork, pull the edges in as they cook, moving the pan to allow the uncooked egg to fill the spaces.

Once cooked through (see photo below) spread the apple puree over one side of the omelette.

Flip the omelette and set aside.

Melt another tablespoon of butter in a larger frying pan (I used a rectangular skillet but used the technique in step 4 to keep the shape a circle a little bigger than the first omelette).

Once cooked to the same firmness as the first omelette, spread half if this omelette with the apricot jam.

Place the apple omelette onto the jam, and flip the larger omelette over it.

Move the omelette into the middle of the pan, sprinkle with icing sugar and place under the grill/broiler for a few minutes to catch the sugar.
