Green Pav Bhaji

Blanch spinach leaves and add them in ice water. Add blanched leaves to the mixer jar along with ginger and chilli and make a fine purée.

Heat oil in a pan. Add chopped garlic and sauté for a minute. Now add onion Whites and capsicum.

Add onion greens, tomatoes and peas. Let it cook for 5 minutes.

Once the vegetables are cooked, add mashed potatoes and purée. Cover the pan and let it cook 5 minutes.

Add the spices and lemon juice. Mix well. Sprinkle some coriander leaves on the top.

Our Green Bhaji is ready to serve. Enjoy!
