Ingredients

1 serving
  1. 1sole fillet, 6 oz (about 170 g)
  2. 1/2 tablespoonmelted butter
  3. 1/4 teaspoonpaprika or mild chili powder
  4. Salt and pepper to taste
  5. Ingredients for chermoula sauce
  6. 1/4 teaspoonsaffron
  7. 2 tablespoonsboiling water
  8. 1/3 cupchopped cilantro (about 10 g)
  9. 1/4 cupchopped parsley (about 5 g)
  10. 2 clovesgarlic, finely chopped
  11. 1/2 tablespoonfinely chopped ginger
  12. 1/4 teaspoonsalt
  13. 1/2 teaspoonground cumin
  14. 1 teaspoonpaprika or mild chili powder
  15. 1/4 teaspoonground coriander (ground coriander seeds)
  16. 1/4 teaspooncayenne pepper
  17. 3 tablespoonsolive oil
  18. 1 tablespoonlemon juice
  19. 1/4 teaspoonsalt

Steps

  1. 1

    To make the sauce:
    Place the saffron in a small bowl and soak with 2 tablespoons of boiling water. Meanwhile, prepare the rest of the ingredients.
    In a small bowl, mix all the ingredients together with the saffron. Serve at room temperature.

    To prepare the fish:
    Melt the butter and mix with the paprika, salt, and pepper.
    Place the sole fillet in an individual oven-safe dish and pour the spiced butter over it.
    Broil the fish in the oven at high heat.
    Serve with cauliflower rice and chermoula sauce.
