This is a dish I love and it reminds me of the wonderful flavors and aromas of Sicily. It's a delicious and simple pasta.

Wash and slice the eggplants into rounds.

Heat some olive oil in a skillet. When hot, fry the eggplant slices after patting them dry.

In a pot, add a drizzle of olive oil and sauté two whole, peeled garlic cloves. You can remove them later if you prefer. After a few moments, add the tomatoes or tomato sauce and some of the fried eggplant.

Simmer on low heat with the lid on until cooked through.

Bring a pot of water to a boil for the pasta. When the pasta is ready, drain it and toss with the eggplant sauce.

Finish the dish with crispy fried eggplant, fresh basil, and grated ricotta salata cheese on top.
