Kadhai pasta masala

I am very fond of creating fusion recipes this recipe is another attempt to create a delicious recipe combining two cuisines. Kadhai paneer or kadhai chicken are famous main course dishes from the northern hemisphere of India. I have used the masala from this recipe to create the sauce and combined it with perfectly cooked pasta.
The result... A yummylicious, flavorful and unique recipe.
Though the kadhai preparations wether vegetarian or non vegetarian are kind of dry , however we will create a gravy or a sauce as we will be adding it to the pasta.

The kadhai dishes get there unique flavour and taste from a special kadhai masala. We will prepare this masala first.

In a pan dry roast the jeera, dhaniya, Saunf, dry red chilli and black pepper whole for 2-3 minutes on low heat. Cool and coarsely grind. Keep aside.

In a pan heat 1 tbsp oil on high heat add the capsicum and onion squares. Roast till small golden spots appear. Remove and keep aside.

To prepare the sauce, heat oil in a kadhai. Add jeera, saboot dhaniya and whole dry red chilli. Roast for 30 seconds and add the chopped onions.

After 2-3 minutes add the ginger garlic paste. Mix and keep cooking till onion turns golden brown and oil is released.

Now add 1 tbsp of prepared masala, degi red chilli powder and haldi powder. Mix well. Roast for 1 min.

Now add besan and roast for 1 min more. Add the cream or malai mix well.

Now add the tomato puree and mix. Add salt and mix again.

Now add water and bring it to a boil. Reduce the heat add garam masala and kasoori methi. Your sauce is ready.

To make the pasta, boil the water and add salt and oil to it. Add pasta to boiling water and cook for 10 minutes. Drain in a colander and refresh with cold water. Keep aside.

In a pan add a cup of prepared sauce. Heat it up, now add the prepared onion and capsicum. Mix.

Finally add the pasta and mix well to coat. Check the seasoning.serve hot garnished with chopped green coriander. Yummy kadhai pasta masala is ready.
