Crockpot Green Beans, Bacon, and Potatoes

Heat a Large Skillet over Medium Heat. Add Bacon Pieces and cook until Crisp. Remove Bacon from pan, and place on a Paper Towel lined plate. Set aside. Keep the Bacon Grease in the pan.

Add Onion Slices to the pan. Salt and Pepper lightly. Cook until they start to Soften, then add Garlic. Cook until Onions are nice and Soft and the Garlic is lightly browned. Turn off heat.

Place Trimmed Green Beans in the Crockpot. Pour the Onion, Garlic, and Bacon Grease mixture over the Green Beans. Mix well. Now, add the Bacon Pieces, Chicken Stock, and Seasonings. If using Bouillon, don't add any Salt yet. You can taste for seasoning at the end of cooking. Add the Potatoes. Lightly Salt & Pepper the Potatoes & Give One more Stir.

Cover and Cook on Low for 8 hours. Uncover and taste for Seasoning and Doneness. If it's not done enough for your liking, turn the Crockpot back on Low for a few hours, or on High for an hour or so. I like my Beans and Potatoes to be on the softer side, so I typically cook mine longer. Once done, turn Crockpot to the Warm setting and Serve.
