Stir-fried Bean Sprouts and Prawns with Salt and Garlic

When I bought prawns on sale at the supermarket, there were all different sizes and some were too small to cook with mayonnaise or chili sauce.
I used these small ones to make this tasty stir-fry dish. With this recipe, the small prawns become a main dish.

At step 4, heat ginger and garlic over low heat. I always do step 1-4 beforehand. While I wait for my husband returning home from work, I repeat a process of turning up the heat, turning it off when the pan gets too hot, and letting the pan cool. This flavours the oil and makes it aromatic. Recipe by Hichan

Ingredients

2 servings
  1. 200 gramsPeeled prawns
  2. 1 bagBean sprouts
  3. 5Green onions or scallions
  4. 3cm length Tubed ginger
  5. 3cm length Tubed garlic
  6. 1 tbspSake
  7. 1 tspSalt
  8. 1Coarsely ground pepper

Steps

    Devein the peeled prawns and rinse in salt water (not listed). Drain and sprinkle with salt and pepper (not listed).

    Rise the bean sprouts and drain well.

    Cut the green onions into 3cm lengths.

    In a pan with oil (not listed), add ginger and garlic and heat. Fry over low heat until fragrant.

    Turn up the heat to medium and add the prawns.

    After the colour of prawns slightly changes, add sake.

    Add bean sprouts and green onions and season with salt. Continue frying.

    After everything is cooked, season with salt and coarsely ground pepper.

    Transfer onto a serving dish and serve! Avoid overcooking the sprouts to keep the crunch.
