Ingredients

  1. 1 tbspGarlic
  2. 1 tbspOnion powder
  3. 1 tspCumin
  4. 1 tspCinnamon
  5. 1 tspSugar
  6. 1/2 tspSalt
  7. 1/2 tspPepper
  8. 8Chicken thighs
  9. 1 tbspOil
  10. 1 cupChopped green onions
  11. 4 cupFresh corn kernels (about 6 ears)
  12. 1Red bell pepper

Cooking Instructions

    Preheat to 375

  2. 2

    Combine first 7 ingredients & rub on chicken

  3. 3

    Heat oil in oven proof skillet. Add chicken & cook until browned, about 5 minutes per side. Transfer to plate.

  4. 4

    Combine onions, corn, & chopped pepper in 13 x 9 pan. Place chicken on top of corn mixture. Cover & bake 15 minutes. Uncover & bake 15 minutes more
