Firstly take buttermilk in a bowl, add salt and suji to it. Mix well so that no lumps are formed.

Coarsely grind green peas and corn. Add to the suji batter. Add finely chopped capsicum, cumin powder, ginger-chilli paste, oil and coriander leaves. Mix well and cover and keep aside the batter for 15 minutes so that the suji absorbs water.

Lastly add baking soda just before making the appe and mix well. Heat appe pan, add a few drops of oil in the appe holes. Fill half the holes with batter and place a piece of cheese in center of each appe hole. Then fill some more batter on it. Cover and cook on medium flame till the sides turn crisp.

Flip the appe and again add 2-3 drops of oil in the holes. Cover and cook the other side. Serve hot with coconut chutney or mint chutney/ketchup.
