Sweet Potato Balls with Okara

I was going to bake cookies using sweet potatoes and okara, but the dough tasted so good that I just turned that into a recipe.

The moisture content of sweet potatoes and okara tends to vary, so if your mixture is a little dry add a drop of milk – enough to make the dough soft enough to roll into balls with your hands. I used 0.5 tablespoons of milk. You can achieve a similar taste using skim milk (see Step 6). For Step 5, sprinkle on whatever takes your fancy. Recipe by miyuki12

Ingredients

16 servings
  • 100 gramsSweet potato
  • 60 gramsFresh okara
  • 1 tbspor more Condensed milk
  • 1Milk

Steps

  1. 1

    Soften the sweet potato by boiling or microwaving, then mash. Heat the okara in the microwave at 500-600 W for 2 minutes and set aside.

    Add all the ingredients to a bowl and knead together, washing your hands well beforehand.

    Roll into whatever sized balls you like, and they're done. Enjoy with a drink.

    I rolled it into small balls (5 g) and put them in a bowl of plain yogurt, and it was really delicious.

    You can also sprinkle with some cinnamon.

    When making with skim milk, replace the condensed milk for 3 tablespoons skim milk and 1.5 tablespoons of sugar.

    Addendum: Store in the refrigerator. As they include okara, eat them up as soon as possible.
