The combination of Gajar ka halwa and Chocolate is one delight that is sure to tantalise your taste buds.
Go ahead and give this recipe a try... you will "ABSOLUTELY NOT" regret it!

Heat 2 tbsp ghee in a kadhai. Now add 2 cups grated carrot. Keep the heat low and Cook the carrots for 5 to 7 minutes or until soft.

Now ⅓rd cup sugar and mix it well. Cook for another 5 minutes in medium low heat.

Add half the quantity of milk and cook until the milk is reduced and completely absorbed by the carrots.
This might take another 3 to 4 minutes, now pour the rest of the milk and reduce it completely until the carrot start sticking together, and leaving the sides of the kadhai. - 4
Add 4-5 drops of Vanilla Essence and half of the quantity of Hazelnuts.
Turn off the flame and allow the mixture to cool completely. - 5
Now with the help of spoons shape them into Quenelles. (You can choose to do this by hand and give it whatever shape you like.)
Freeze it for 10- 15minutes. - 6
Microwave the compound chocolate for 30 seconds. Remove and give it a mix, again microwave for another 30 seconds and again mix it. Repeat it for the third time or until the chocolate melts completely.

Now add the rest of the chopped hazelnuts to the chocolate. Remove the set carrot from the freezer and start dipping in the chocolate. Coat the carrot nicely with the help of a spoon and place it on top of a foil paper.

Refrigerate for 4 - 5 hrs before serving
