Vegetarian Caesar Salad Dressing

It took me so long to realise that Caesar salad dressing isn't vegetarian! Using capers instead of anchovies gives the dressing that briny flavour distinct to Caesar salad and homemade salad dressing is always so much more tasty then what you can find in shops!

Roast the garlic in the oven for 5-10 minutes, until it is soft. Leave to cool, then peel and mash using the back of a fork.

Mix all of the ingredients together in a bowl. Blitz with a hand mixer to make the dressing into a smooth paste. Aim for a dressing with the texture of yogurt, a little thick but still runny.
