My family loves chilled Chinese-style noodles and like to eat it year round, but it's not available during the winter. Thus I created this recipe... We've been eating the noodles with these two dressings for ages.
It's like the noodles you can get at an upscale Chinese restaurant. When you make it yourself, you can vary the seasoning and the dish to your liking.
Try whichever dressing you prefer.
They can also be used with "jellyfish in vinegar sauce" and "steamed chicken."

For the sesame dressing: Put the hot chicken stock and tahini or ground sesame paste in a bowl, and mix until the sesame is dissolved.

Put in the rest of the ingredients and mix well.

If you are making a large batch, heat the chicken stock (made in advance) with the other ingredients in a pot over low heat.

If you prefer regular "soy sauce dressing," add all the "soy sauce dressing" ingredients to the chicken stock and mix well. I choose which dressing to make depending on my mood.

Drain the cooked noodles, wash in cold water, and drain very well, top with your favorite toppings, and pour whichever dressing you prefer, and it's done Here I poured the soy sauce dressing.

Here, I used the sesame dressing.

The dressing packets that come with commercial hiyashi chuuka noodle packs always seem to thin out as you are eating it, and there's never enough. With homemade dressing, you can add as much as you want.

I use this Chinese sesame paste. If the paste doesn't dissolve easily, scrape it against the sides of the bowl as you mix.

Try adding about 1 teaspoon of gochujang to the sesame dressing as a variation.

I used the soy sauce dressing on steamed chicken breast here. This is delicious too. You could also season with the sesame dressing.
