In a bowl whisk together sugar, cinnamon and salt

Line a baking sheet with parchment paper. Preheat the oven to 400

Dust work surface with granulated sugar. Place puff pastry sheet on work surface, sprinkle surface with some cinnamon sugar mixture to cover surface anout 3 1/2 tablespoons, press sugar mixture in by rolling with a rolling pin.

Roll each end in to meet in the middle, sprinkle with some cinnamon sugar and roll in, pinch lightly to seal

Cover with plastic wrap. Chill 30 minutes

Brush top with egg wash

Sprinkle with Cinnamon sugar

Cut into 1 inch strips,

Pinch middle of each cookie to adhere gently

Place 2 inches apart on prepared pan, bake about 10 to 14 minutes until golden, carefully turn over with a spatula and cook about 4 more minutes

Transfer to parchment lined wire racks to cool. The parchment will keep them from sticking to the wire racks.
