Ingredients

  1. 5medium sweet potatoes
  2. 1/2 cupbutter softened
  3. 2large eggs beaten
  4. 1/2 cupwhite sugar
  5. 1 tbspvanilla extract
  6. 1/2 cupheavy cream
  7. Pinchsalt
  8. Topping:
  9. 1 cupchopped pecans
  10. 3/4 cupbrown sugar packed
  11. 1/4 cupbutter softened
  12. Pinchsalt

Steps

  1. 1

    Heart oven to 400. Place the sweet potatoes on a foil lined baking sheet. Pierce with a fork. Bake for 1 hour. Allow to cool. If desired bake night before and refrigerate.

    Peel the potatoes and place the flesh in a large mixing bowl. Mash until very smooth. Mix in butter, eggs, sugar, vanilla, cream and salt until thoroughly combined. Transfer mixture to a greased 4 quart casserole dish. Smooth to an even layer.

    Mix all Topping ingredients in a bowl. Sprinkle evenly on top of the mixture.

    Bake in a 350 heated oven for 40 minutes until slightly browned. Let cool for 5 minutes before serving.

I used sweetened condensed milk instead of the heavy cream, like my mama used to make.
