Literally meaning 'eggs in hell'. This is one of my favourite dishes, eaten all over the Mediterranean, this is a distinctly more Spanish inspired variation.

Can be enjoyed any time of day, traditionally enjoyed communally as a breakfast. Serve with fresh bread and coriander.

Ingredients

  1. 150 gChorizo, diced
  2. 1 Tinchopped tomatoes
  3. 1Red onion, diced
  4. 1Red bell pepper, diced
  5. 1Red chili pepper, finely chopped
  6. 1 handfulcherry tomatoes, halved
  7. 2eggs
  8. 1 tbsppaprika
  9. 1 tspcumin
  10. 1 tspcorridander
  11. 1 tspturmeric
  12. 1 tsporegano
  13. Salt and pepper, to taste
  14. Splashred wine vinegar
  15. Splasholive oil
  16. Garnish
  17. Fresh coriander

Steps

    Prep your ingredients

    Fry the Chorizo in a little olive oil until it begins to release it's juices

    Add the vegetables and fry until they soften, around 5 minutes

    Add the spices and fry until fragrant, around 30 seconds

    Deglaze the pan with a little red wine vinegar and add the tin of chopped tomatoes

    Cook down until the sauce begins to thicken and you can make a well

  7. 7

    Add the eggs to the sauce (in well in the sauce), cover the pan and cook the eggs to your liking

    Top with feta and coriander and serve with fresh bread
