For making the stuffing set a pan on medium heat. Add oil, once the oil heats up add cumin seeds, let it temper for 20 seconds. Later add chopped onions and saute for a minute or until onions become translucent.

Add chopped green chillies and saute. Add red chilli powder, turmeric powder and coriander-cumin powder, mix well. As the spices seems tempered add boiled and smashed potatoes.

Add salt as per taste, dry mango powder, garam masala, chaat masala, mix well and cook for 2 minutes. Turn off the heat and add chopped fresh coriander leaves.

For second tempering, keep a pan on medium heat and add oil. Add chopped garlic, and saute. Add chopped tomatoes and saute for 2-4 minutes (until tomatoes are cooled properly).

Add dry fenugreek leaves (kasuri Methi) crush it using your hands and saute for about a minute. Add the above prepared stuffing and mix well.

Now add boiled green peas and mix well.

Note: You can avoid green peas, you can avoid doing second tempering and do all of it together. Also, when you do second tempering it helps retaining the flavors of garlic, tomatoes and Fenugreek. If you do it together you won't get the real flavours.

To prepare the bell peppers, take small peppers, wash and rinse them properly. Cut the top and deseed, pat dry. Brush a little oil on the skin and stuff the prepared stuffing. Roast them on a plain dry tawa, do not add any oil or butter. Keep turning the sides of the peppers and make sure all the sides are cooked well.

Garnish with some cheese and serve hot. Enjoy!!
