The name of the dish, 'khichdi' is derived from the Sanskrit term “khicca” meaning a dish of rice & legumes. It is known by various names like – khichri, kichuri or kichadi. Moong dal is the most common lentil used with the combination of rice. But I prefer mixing the rice with a combination of few dals. And this tastes just yummmm....

Moong dal is the most common lentil used with the combination of rice. But I prefer mixing the rice with a combination of few dals. And this tastes just yummmm....

Firstly mix the grains and was them well then soak them in water for about half an hour.

Then heat a pan, add 2 tbsp of ghee/oil then add some jeera, bay leaf and red chillies. Let them splutter a bit. Then add chopped onion, chopped tomatoes and ginger-garlic paste. Mix everything well and fry the masalas for 2 mins. Then add dry masalas like cumin powder, coriander powder, turmeric powder, salt and 1 tsp of sugar. Now fry them until oil starts releasing from the masalas.

Then add all the veggies into the masala. You can add any veggies of your choice. Mix everything well and fry them along with the masalas for about 2 mins. Now keep this mixture aside.

Now take a pressure cooker and add the soaked grains into it. Then add 4 cups of hot water. Now add the masalas and vegetable mixture into it. Mix everything well. Now add some more salt, turmeric powder. Mix it well & cover the cooker.

Wait for 3 whistles on high flame. Now lower the flame and cook for 7 to 8 mins more. Switch off the flame. Let the air release by its own.

Now add a tbsp of ghee over it and serve it hot with any kind of fries of your choice..enjoy this simple meal with your loved ones on this weekend..
