Many people are familiar with the classic look of mango sticky rice. Today, I want to share a new way to make this traditional dessert even more interesting.
Steps
- 1
Soak the sticky rice by swirling it with alum, then let it soak for 15 minutes. After that, continue soaking in water for a total of 3 hours.
- 2
Drain the water and steam the sticky rice for 8-10 minutes.
- 3
While the sticky rice is steaming, prepare the coconut mixture. In a pot, combine the coconut milk, sugar, and salt. Heat until it just comes to a boil, then remove from heat.
- 4
Transfer the cooked sticky rice to a mixing bowl. Pour the hot coconut mixture over the rice and stir to combine. Let the rice absorb the coconut milk, stirring every 5 minutes.
- 5
To make the coconut sauce, pour the coconut milk into a small pan. Add salt and corn starch, and stir until the starch dissolves. Heat and stir constantly until the sauce thickens, then remove from heat.
- 6
Peel the mango and slice it thinly.
- 7
Spoon the coconut sticky rice into a donut mold, then remove from the mold and place on a serving tray.
- 8
Arrange the mango slices on top of the sticky rice and sprinkle with toasted mung beans. Cover with a lid.
