Ingredients

4 servings
  1. 1/2 cupflour
  2. 1 cupcorn meal
  3. 2 Tbsseason salt
  4. 2 Tbsminced dried onion
  5. 1 stickbutter
  6. 2 cupspeanut oil or substitute with bacon grease
  7. 1/2 poundDandelions

Cooking Instructions

    Rinse a large bowl (approx. ½ pound of Dandelions) in cold water 3 or 4 times.

    Drain excess water but leave wet.

  3. 3

    In the bowl add season salt, minced dried onion and shake to incorporate.

  4. 4

    Add corn meal and flour shake again.

  5. 5

    In skillet, add oil and butter. Cook on medium heat until slightly brown and crunchy.

    Serve!

Did you know there is a cultivated kind of dandelion you can grow in your garden? It has longer leaves and no flower like the common weed dandelion. They are also cut and come again all season. My Grandma grew them and cooked them with beets that she also grew because dandelion are slightly bitter so the sweet in the beets help offset the bitterness.
