Steps

Prepare a leaflet or photo of a maple leaf the size and shape you like. This time, I used a leaflet from a sushi shop.

Cut out the leaf and lay it on top of the carrot slice.

Cut around the cut-out with a knife. *Watch out for your fingers.

Turn Step 3 on its side and slice to your desired thickness.

Here, I sake-steamed the carrot leaves with salmon. Looks like fall.
