Chilla is an Indian version of pancake and is highly nutritious. It is a very versatile recipe where any available vegetable may be added to the basic chickpea flour batter to make a healthy breakfast for your kids and family.Here lauki or bottlegourd is grated,sqeezed and used in chilla.The sqeezed out water from lauki is used with little water to form a smooth batter.The tanginess of curd,warmth of green chillies alongwith grated carrots, beans,onion, semolina and other masalas make this nutritious recipe all the more healthy and a hearty flavourful meal.Serve it in breakfast or evening snacks with curd,tomato sauce or mint chutney or mixed pickle.

Mix chickpea flour with suji or semolina,curd,salt,baking powder,carom seeds and other masalas.Add water to make a thick batter.Add all chopped and grated ingredients and mix well.Add squeezed out water from lauki to the batter.Adjust water now to make a vegetarian omelette like consistency. Cover and set aside for 10 minutes.

Heat 1/2 tsp oil in a tadka pan and sprinkle mustard,cumin and when it splutters,add it to the batter alongwith hing.Heat a non-stick tawa or frying pan smearing 1 tsp oil. Pour a ladleful of batter and spread it.Fry on low heat till underside is well browned and crispy.Flip and cook the other side.

Serve hot, healthy lauki carrot chickpea flour chilla with curd, chilli garlic tomato sauce,mint chutney or mixed pickle in breakfast or evening snacks.
