Yuca in mojo sauce reminds me of my mom's and grandma's cooking and countless summer vacations at the beach. I usually have cooked yuca in the freezer. Next time I make it, I'll share the recipe.

Heat a pan. Add enough olive oil to cover the bottom of the pan. Add the garlic and lower the heat to cook it well without browning.

Once the garlic is cooked, add the orange juice, salt, and pepper to taste. Increase the heat and stir to emulsify and bring to a boil.

When it boils, add the yuca and stir to heat it thoroughly and ensure it is completely covered in mojo sauce.

Serve the tuna with the yuca in mojo sauce.
