Pea & Potato Puffs

Inspired by Lorna from 'Feed Your Family for £20 a Week' who has a recipe on her website for 'Cheese & Potato Dumplings', I found I had peas left over too but wanted to leave out the cheese, and so I thought I could adapt the basic recipe to suit. To make them more 'puffs' and less 'dumplings' I also whisked the egg whites before mixing.

Beat the egg yolks until combined.

Stir the egg yolks into the mash (it's easier to do this if the mash is at room temperature).

Whisk the egg whites in a scrupulously clean bowl, until thick and fluffy.

Fold the egg whites into the mash a spoonful at a time.

Season to taste (remember that the mash was probably already seasoned) and gently fold in the peas.

Place spoonfuls of the mixture onto a baking sheet lined with greaseproof paper.

Bake for 25-30 minutes until puffed up and golden.

Serve with your favourite main.
