I had some red potatoes that were a little on the small side. I was going to make “Cottage Fries” and decided against it. I thought, “Why don’t I just smash these damned things and fry them whole”? It worked out great, nice and crispy.

Ingredients

25 Minutes
3-4 People
  1. 8Red Potatoes
  2. 5 CupsCooking Oil
  3. 1/2 Tsp.Black Pepper
  4. 1/2 Tsp.Turmeric
  5. 1/2 Tsp.Paprika
  6. 1/2 Tsp.Chili Powder
  7. 1/2 Tsp.Onion Powder
  8. 1/2 Tsp.Garlic Powder
  9. 1/2 Tsp.Oregano
  10. 1/2 Tsp.Rosemary
  11. 1/2 Tsp.Thyme
  12. 1/2 Tsp.Salt

Cooking Instructions

    Wash potatoes throughly. Stab with fork and wrap in plastic wrap. Place in microwave and press the potato setting as if you were microwaving 3 potatoes. Remove from microwave and allow to cool. Begin heating your oil.

    Chop herbs finely (or use dried herbs). Mix all of the remaining spices with the herbs.

    Hopefully the potatoes have cooled somewhat. The skin of the potato is necessary for this to work. It holds the potato together. Give the potatoes a gentle smush with a saucer. Place into hot oil. Flip occasionally until golden brown.

    Remove and place on a rack with paper town underneath. Never on the paper towel... makes it soggy. Immediately sprinkle the spices and herbs onto the potatoes. Flip them over and repeat. Fry the rest of the potatoes and give them the same treatment.

    Serve with whatever breakfast foods you wish. Enjoy!
