Homemade Mascarpone Cheese

When we talk about Mascarpone chees, we usually think of tiramisu or cheesecake. But this cheese can be used as a spread for sandwiches, pizza etc. It can be even used as a dip added with a few herbs and spices. It can even be added to pasta dishes to increase the taste and flavour of the dish.
Mascarpone cheese available in the market is very expensive. To prepare this cheese at home is really very easy and it is very cheap also compared to store-bought cheese. It turns out equally creamy and delicious. This is a very easy and simple recipe to prepare homemade mascarpone cheese.

First of all heat water in a pot to make a double boiler. Now add cream to another bowl and put that bowl on top of the pot making sure that the bottom of the bowl does not touch the boiling water. Keep the heat medium.

When the cream starts bubbling add lemon juice to it one teaspoon at a time and keep stirring. The cream will start getting thicker. Now reduce the heat to low and keep stirring and cooking for another 3 to 4 minutes.

Put a sieve in a bowl or a container. Now line the sieve with a cotton or muslin cloth and add the cream to it. Cover it with the cloth and and keep it in the refrigerator for 4 hours so that extra water will be collected in the container.

After 4 hours you will notice that some water is collected in the container and the creamy mascarpone cheese is ready.

If you find that too much water has come out and the cheese is a bit dry, you can add the same water 1 or 2 tbsp to the cheese and give it a good mix. You can store this cheese in the refrigerator for 3 to 4 days.

Homemade mascarpone cheese can be used in cheesecake recipes, tiramisu or as a spread or dips. It can be easily added to pasta dishes to enhance the flavours and texture.
