(Better Than It Looks) Fluffy Microwave Banana Mug Cake

Mash the ripe banana in a bowl until most of the lumps are gone.

Add 25g neutral oil or unsalted melted butter, 10g brown sugar, pinch of salt, and dash of vanilla extract. Mash to combine.

Mix in 55g all purpose fllour, 1/8 teaspoon baking soda, 1/8 teaspoon baking powder, and cinnamon (optional) until all dry bits are gone. Use a spatula to help scrape down the bowl.

Transfer the mixture to a mug. It will expand and deflate in the microwave so make sure the mug is not too small!

Microwave for 1:40-2 minutes. It will be hot so be careful taking it out! Enjoy hot or let it cool before eating
