Arab Fried Fish or Emperor Fried Fish

Emperor or Sheri Fish as it's called in the Arab World is simply the King of Kings among the Fishes (in terms of taste). Majestic in all sense to look at and as well as to eat. A common menu item in most luxury Hotels, it is the most sought-after one and comes in more than fifty shades. This one is the Classic variety and is an excellent variety of Fish available abundantly in the Middle Eastern Countries. It has firm flesh and is full of flavors. This is a full Fish fry recipe by me in my way. Although it can be grilled for a much better flavor and texture. This one here is a pan-fried one and is actually deep fried. If you wish, you can remove the head part and use it in Gravies or Fish Head Curries. The spices used are also very simple and easily available in every pantry. It has antioxidants that help control cholesterol levels in the body and has polyphenols that reduce the risk of heart disease.

Steps

It's important to marinate the Fish first. You can fry them as it is or can remove the Head part and use it in different Gravies or Curries. I have done both with and without Head. Wash and clean it thoroughly. Add all the spices along with the Fish to a large bowl and mix well with your hands. Use kitchen gloves to do so.

Leave it overnight in the refrigerator well covered. This is the most important step. The longer the marination, the better the taste and texture.

Deep fry in enough hot oil in a deep frying pan or a Kadai a few at a time. Deep fry on both sides by turning over every now and then to avoid burning. Drain on absorbent paper. Serve them piping hot with Hyderabadi Khatti Daal and a steaming plate of plain boiled Rice. Enjoy!
