Wash the strawberries well, dry them, remove the stems, and slice them thinly. Place about 7 oz (200 grams) of strawberries in a blender with the water and 1/4 cup sugar (about 50 grams). Blend until smooth and liquid, like a fruit juice, then pour it into a wide, shallow bowl.

Take two bowls: separate the egg yolks into one and the egg whites into the other.

Using an electric mixer, beat the egg whites until stiff peaks form. Once they are fluffy and firm, place them in the refrigerator for a few minutes.

In the other bowl with the egg yolks, use a whisk to beat the yolks with the remaining sugar. When the mixture is smooth and creamy, add the mascarpone and mix well until there are no lumps. For best results, use the same whisk you used for the egg whites.

Remove the whipped egg whites from the refrigerator and gently fold them into the mascarpone, sugar, and egg yolk mixture.

Lightly dip the ladyfingers into the strawberry juice you made, being careful not to soak them too much (if the cookies get too wet, the tiramisu will turn out too runny and won't have the right texture).

Arrange a layer of dipped ladyfingers in a baking dish.

Cover the first layer of cookies with the mascarpone cream you prepared. Add another layer of ladyfingers, then more mascarpone cream and sliced strawberries, repeating the layers until you reach the top of the dish.

Finally, top the last layer of your tiramisu with the remaining sliced strawberries. Let the dessert chill in the refrigerator for a couple of hours before serving.
