Macrobiotic Sweet Potato Cookies

I had a lot of steamed sweet potatoes left over and decided to make cookies out of them. Though I didn't intend it, they ended up having pretty much the same texture as sweet potatoes.

Mixing everything in a plastic bag makes this so easy It's important not to deflate the air from the bag when mixing in the B ingredients, or else the dough will not come together. If you're having problems, add milk a teaspoon at a time until it comes together. Recipe by Ashitto

Ingredients

20 servings
  1. A
  2. 100 mlMashed and steamed sweet potato
  3. 100 mlFlour (cake flour)
  4. 2 tbspKatakuriko
  5. 11/2- tablespoons Beet sugar
  6. 1 dashSalt
  7. B
  8. 1 1/2 tbspCanola oil
  9. 1 tspVanilla essence

Steps

  1. 1

    Put the A ingredients into a plastic bag. There is no need to deflate the air from the bag. Shake well to mix.

  2. 2

    Add the B ingredients to the mixed dry ingredients from Step 1 and shake again to mix. It will gradually come together to form a dough (do not knead the mixture).

  3. 3

    Make into a log, and slice into cookies. Bake in the oven at 180℃ for 15-20 minutes.
