Ingredients

  1. 3 packages (10 ounces)each) frozen chopped spinach
  2. 1 tablespooncanola oil
  3. 1onion chopped
  4. 1 clovegarlic,minced
  5. 2Anaheim chiles,roasted peeled and minced
  6. 3fresh tomatillos,roasted,husks removed and chopped
  7. Sour cream (optional)

Cooking Instructions

    Place frozen spinach in crockpot

    Heat oil in large skillet over medium heat. Add onion and garlic;cook and stir 5 minutes or until onion is soft but not browned. Add chilies and tomatillos;cook and stir 3 to 4 minutes. Add mixture to crockpot. Cover;cook on low 4 to 6 hours. Stir before serving. Serve with sour cream,if desired.
