pre heat oven to °400

spread spinach out on a cookie sheet. drizzle oil then toss to oil up all of the spinach leaves. spread out on the cookie sheet and lightly sprinkle salt and pepper.

cook for about five minutes. watch them closely so it doesn't dry out completely. You want some of the leaves to be toasty and browned.

be sure to wash the spinach and make sure it is dry so the leaves don't steam.
