Ingredients

  1. 250 gbutter
  2. 250 ggolden caster sugar
  3. 4eggs
  4. 280 gself raising flour plus 1/2 tsp baking powder
  5. 120 mlmilk
  6. 1 tspvanilla and 1 tspn Moroccan almond extract
  7. 15 tspblackcurrant jam (just to dot around)
  8. 100 gfrozen blackcurrants
  9. 25 gchopped hazelnuts

Steps

45 minutes

    Cream softened butter and sugar together

    Add eggs to mixture and then incorporate the flour and milk

    Prepare a baking tray 20×30 cm

  4. 4

    Add almond and vanilla extract to sponge mixture and spread on prepared tray and bake for 10 minutes at 180°C

    QUICK remove from the oven and dot the part baked cake with about 15 dollops of blackcurrant jam a good sprinkle of chopped hazelnuts and frozen blackcurrants

    Quickly return to the oven and bake for another 15 to 20 minutes.
