Slice the baguette in half lengthwise and spread mayonnaise and mustard on both sides. Place a layer of spinach leaves on the bottom half of the bread. Add slices of pork leg roll on top.

Add pickled red onion and pebre salsa. Close with the top half of the bread and secure the sandwich with picks and olives for decoration and to hold it together.
