Ingredients

  • 3large eggs
  • 2bananas
  • 1 2/3 cupscake flour (about 200 grams)
  • 3/4 cupvegetable oil (about 200 grams)
  • 3/4 cupgranulated sugar (about 150 grams)
  • 1 teaspoonlemon juice (about 5 grams)
  • 1 teaspoonbaking soda (about 5 grams)
  • 1 teaspoonbaking powder (about 5 grams)
  • 2-3caps vanilla extract
  • 1/2 teaspoonsalt (about 3 grams)
  • Toppings of your choice (pictured: sliced almonds, cashews, chocolate chunks, raisins)

Steps

  1. 1

    Sift the flour, baking powder, and baking soda together twice, then set aside.

  2. 2

    Beat the eggs, sugar, and salt on high speed for about 3-5 minutes.

  3. 3

    After 3-5 minutes, gradually add the flour and mix on low speed.

  4. 4

    Add the vegetable oil and mix until well combined.

  5. 5

    Mash the bananas until smooth, then add the lemon juice.

  6. 6

    Mix the mashed bananas into the batter until well combined.

  7. 7

    Add the vanilla extract.

  8. 8

    Preheat the convection oven to 390°F (200°C) for 20 minutes.

  9. 9

    Spoon the batter into the prepared molds, filling them almost to the top for a nice rise.

  10. 10

    Decorate the top with sliced almonds, cashews, chocolate chunks, and raisins as desired.

  11. 11

    Bake at 300°F (150°C) for 20 minutes (using the top rack).

  12. 12

    Once baked, let the cake cool on a rack before storing. It can be kept for 3-7 days.
