Ingredients

Serves 4 servings
  • 2serrano peppers, finely chopped
  • 1/2small red onion, finely chopped
  • 1/2 cupcilantro, finely chopped (about 10 grams)
  • Juice of 1 lime
  • 2 teaspoonsolive oil (about 10 ml)
  • 2tomatoes, diced
  • 1avocado, diced
  • 2 cupscooked black beans, drained (about 340 grams)
  • 2 cupscanned yellow corn, drained (about 340 grams)
  • Salt, to taste
  • Lettuce leaves, for garnish

Steps

30 minutes
  1. 1

    In a bowl, combine the black beans, corn, tomatoes, serrano peppers, red onion, and cilantro.

  2. 2

    In a separate small bowl, mix the lime juice with the olive oil and season with salt to taste.

  3. 3

    Pour the lime and oil mixture over the salad and toss to combine.

  4. 4

    Serve on a plate and garnish with diced avocado and lettuce leaves.
