Hyderabadi Meetha Khana

Meetha Khana or Sweet Rice tossed in Ghee and garnished with loads of dry fruits is a famous Dessert in Hyderabad. It is made just like our regular Rice and instead of water, Milk is used to cook this fragrant Rice. This one is everyone's favorite. It is a very easy and quickly done Sweet dish and is mostly made on a few important occasions and Festivals too in the City. It's served warm for a lovely taste. Basmati Rice is a good choice for this one. Ordinary Rice will not work perfectly for this recipe. The grains should be long, slender, and firm. Only then it's made well.
Otherwise too soft or mushy Rice will spoil the whole dish. It is also known as Zarda, as the name comes from a Persian word Zard, which means Yellow that usually comes from Saffron strands or food color that is being added to it. Saffron gives a beautiful pale yellow color to the dish. But food color might make it a little brighter. That's it. An excellent Dessert that can be served after meals.

In a pan, heat Ghee and add Cloves, Raisins, Green Cardamoms, Almonds, Pistachios, and Cashewnuts slivered along with Dry Coconut pieces. Fry for a minute or two. Now add Milk and Sugar. Bring it to a rolling boil on high heat and then add the Basmati Rice.

Mix well. Cook on medium-high heat until the rice gets cooked. You can add a few pinches of your favorite food color or just Saffron strands like me. It gets a nice pale yellow color. Instead of water, use Milk as per the amount of raw Rice taken. It gets done very quickly. Cover and cook until soft yet firm. Fluff the rice gently. It's all ready to be served warm or cold. Enjoy!

Garnish with more slivered Mixed Nuts. Yum!
