Besan Laddu is all time favorite festival sweet that can be made with gram flour or from roasted chana dal.
Steps
- 1
Take a large pan or kadai and roast chana dal in small portions. Roast on low flame for 12 to 15 minutes till the color changes slightly. Do not burn dal. When the dal cool down completely, grind it into slightly coarse flour from the Flour Mill or food processor. I grind chana dal from Flour Mill.
- 2
Now take thick-bottomed pot and melt 1/2 cup ghee. Add gram flour (besan) and roast it on low flame. When you see besan is dry then, add 1 to 2 Tbsp of melted ghee from time to time as required. Stir constantly with spatula for about 15 to 20 minutes until nice golden-ish color.
- 3
Next add cardamom powder, raisins, charoli, milk masala powder, nutmeg powder and cook for 5 minutes, then turn off the gas.
- 4
While the mixture is warm enough to handle by hand, add sugar and mix well.
Rub Besan and sugar with your fingers till its comes together and break the lumps if there is any. The heat in your hand will help to bind its together. - 5
Apply ghee on your palms. Take a small amount of besan. Roll them into a lemon-shaped round ladoo. If the mixture feels too dry, add melted ghee as required
- 6
Keep this ladoo in an airtight container.
