Prepare the boiled eggs. Once the water has boiled, take the eggs out of the fridge and boil for 10 minutes.

Slice the cucumber into rounds, sprinkle salt and leave for 5 minutes. Remove excess moisture with a paper towel.

Cool the boiled eggs with cold water and chop up finely. Mix with the cucumber and seasonings.

Taste the mixture, and adjust the flavour as you like with mayonnaise and salt and pepper.

Sandwich the filling from Step 4, then cut into any shape you like to finish.

The crunchy cucumber texture is delicious.
