Cooking Instructions
- 1
Cut slits in the roast every inch or so, and stuff with a sliver of garlic. Do this to both sides of the roast until the garlic is used up.
- 2
Mix the dry herbs and spices. Rub them all over both sides of the roast.
- 3
Place roast in crockpot (slow cooker) along with broth and onion soup mix and cook on low for 10-12 hours. I usually flip the roast over once during cooking. If you need a shorter cook time, cook on high for 2 hours then reduce to low heat for another 6-8 hours. Some cuts of meat just take longer in a crockpot to come out nice and tender so the time is variable.
- 4
Eat as is with your favorite sides, slice and serve on crusty rolls for a French dip sandwich with the juice to dip, thicken the sauce with cornstarch slurry or rue to make a rich beefy gravy!

Italian Beef Italian Beef
We call this Italian beef even though there’s no Italian seasonings in it 😆 it’ll cook for hours and we’ll have it on nice crusty rolls. I made enough to feed an army because I’m feeding an army of mouths. Cut this recipe down to your own size and liking. SherryRandall: The Leftover Chronicles -
