An innovative touch by me to a wonderful Dessert from India. Made with pureed Mangoes or Aamras. An absolute stunner! This is a lovely and a beautiful Dessert made in India as well as in parts of Asia on many a special occasions. And I have used pureed Mangoes in this for a lovely twist.
And it's absolutely easy to make this beautiful and lusciuos Rice full of flavours and aroma. Nothing can beat this amazing Rice that's a favourite of many. But when it's made with Aamras or pureed Mangoes, no one can ever resist this. Come, indulge in this fusion Zarda with King of Fruits by me in all it's new avatar. Iam damn sure that you will have a gala time treating your loved ones and friends including your guests and relatives to this stunning beauty.

Heat some Ghee in a cooking pot. Add slightly crushed Cardamoms, Cinnamon stick and a few Cloves. Fry them all for a minute or two. Also add few fried mixed nuts of your choice too. I usually keep fried slivered mixed nuts in my pantry because they are very much handy and absolutely easy to use in many a delightful Desserts.

Meanwhile cook Rice as you normally do for everyday meals. Take care not to break the grains or make it too mushy. They should be cooked al dente. Firm yet fully cooked. Basmati Rice is the ideal choice for this.

Now add this Rice to the cooking pot with the Nuts and spices. Mix well and add Sugar according to one's own taste. Also add a few strands of Saffron and a few pinches of food colour of your choice. And finally the pureed Mangoes or Aamras. Mix it well. Serve warm with a generous garnishing of some more of fried slivered Mixed Nuts.
