Chicken Tender Tempura

These chicken tenders are really soft. My daughter loves them. They're good to put in bento boxes the next day.
Feel free to change the amount of ginger. I love ginger, so I add quite a bit. You could also add thinly sliced shiso leaves to the tempura batter. Recipe by Kotori shokudou san

Remove the sinews from the chicken and cut in half.

Combine the sauce ingredients.

Place the chicken pieces in the sauce and leave it to marinate for about 20 minutes.

Mix the tempura flour and water.

Heat the oil to around 170ºC and deep fry the chicken until golden brown. Done.

It's delicious with ponzu or tentsuyu dipping sauce.
