Peach bacon frittata with hash browns

Preheat oven to 220

Fry bacon until almost crispy.

Chop peaches, pepper, bacon and rosemary. Mix with eggs and 2 tablespoons of bacon grease. Season with salt and pepper

Pour mixture into pie plate and bake until center is set (about 10 minutes)

Wash and shred potatoes one at a time. Fry in pan used for bacon.
