Homemade Lasagna (Quick-Fix Lasagna)

With everyone working from home during lockdown and kids at home too, there are always requests for new dishes. We spend hours planning what to cook each day. This is a quick-fix dish—you don’t need to go out to buy lasagna noodles. I made this lasagna using ingredients easily available at home. It’s healthy and everyone will love it.

This is a quick-fix dish—you don’t need to go out to buy lasagna noodles. I made this lasagna using ingredients easily available at home. It’s healthy and everyone will love it.

Add rice flour, chickpea flour, and whole wheat flour to a bowl. Mix in salt, carom seeds, chili powder, and turmeric powder.

Wash and grate the cucumber.

Add the grated cucumber and ginger-garlic paste to the flour mixture.

Add water to make a thick batter. Cover and let it rest for 10 minutes. After 10 minutes, check the consistency. Add water as needed to make a batter similar to that for uttapam.

Heat a skillet on the stove. Add 2 drops of oil and spread it with a paper napkin. Pour 2-3 tablespoons of batter and spread it out. Cook on both sides, just like making a dosa, cheela, or uttapam.

Make all the sheets this way. Shape the sheets to fit your baking pan.

Prepare all the other ingredients from the list. Also, have a 6-7 inch baking pan ready.

Spread tomato pulp on the bottom of the pan. Place one sheet on top. Sprinkle grated paneer and add cheese slices.

Repeat the layers: tomato pulp, sheet, paneer, then cheese. Bake in a preheated oven at 350°F (180°C) for 15 minutes.

Cut into 6 pieces and enjoy hot homemade lasagna with your family.
