Chop or shred the chicken. Set aside in a bowl.

Chop all the vegetables.

Sauté the vegetables in a small saucepan with oil, salt, and pepper.

Add the shredded or chopped chicken. Mix well. For a creamier filling, add a splash of heavy cream. Add oregano.

Add the chopped eggs and olives. Mix well.

Place one pie crust in a pie pan and fill with the mixture. Cover with the second crust and poke holes with a fork. Brush the top with a little beaten egg.

Bake at 350–400°F (180–200°C) for about 30 minutes. Enjoy!
